Stoned Baked Pizza on our Deck Ovens
Deck ovens are often considered necessary for the best pizza experience possible. As opposed to a conveyor oven (great for higher volume pizza restaurants), cooking pizza on a deck is different.
Last Slice Pizza Bunbury uses electric deck ovens with a stone base, a very popular choice with many of New York's best pizza restaurants. While the process requires much more attention (enough to require a dedicated employee in fact), the results speak for themselves. There is no way to replicate the flavour and texture that results from a pizza baked on a stone.
Not only can Last Slice Pizza set the ambient temperature of the oven, we also control the stone temperature. This dual control allows for the pizza to cook both below and above at the perfect rate. It allows us to create the colour and texture we require on the base, without burning or drying out the dough and ingredients.
This cooking process is coupled with our passion for high quality ingredients, whether it be imported flour or local meats and cheeses. As a result, many of our customers believe we have successfully recreated the New York slice, in our opinion, the greatest of all pizza styles.
